The milk:

The excellence of Trentino dairy products is due to the quality of their raw material: the milk. Stringent checks, regularly carried out all year round, ensure constant maximum quality of milk and its by-products. The genuineness of the dairy products comes mainly from the healthy feed of the animals raised on the scented hay of mountain pastures, guaranteeing the organoleptic qualities of milk, butter and cheese.

The milk is paid according to its quality:

1970. The system of payment for milk according to its quality was and is still based on giving a score (positive or negative) to the various analytical parameters of the milk the farmer gives to the Dairy, which is paid according to the value attributed by the Dairy’s general meeting to each point.
