Livestock farming in Trentino is based first and foremost on dairy cows, which is why the dairy coops play an important role in this productive sector. Almost all the milk produced by the Trentino farms goes to them. The wholesome and genuine flavours recall the Trentino and its valleys, a very rich region which is a real asset for the dairy sector. The strong point of Trentino livestock farms is their position, as they stand at over 600/800 metres above sea level. The mountain is a place that offers the possibility of always having unmistakable, genuine and fresh milk. With this background, the production methods adopted are very different from the industrial ones of large farms on plains.
Fourteen dairy coops give all their production to the Consortium, relying on it for its sale, under the "Gruppo Formaggi del Trentino" brand, whilst two other dairies, " Caseificio Sociale Val di Fassa " and "Latte Trento" rely on the Consortium only to sell the Trentingrana cheese they produce. The cream obtained from the milk given to the dairy coops is sent to the consortium’s butter factory in the Trento plant to make Trentino butter (about 1,5000,000 kilos of butter a year).
